This wine is made from a single vineyard with surface river stones, where an ancient continental sea once stood. The vineyard was planted in 1940, and features Malvar, Madrid's oldest grape variety, along with other ancestral varieties such as Moscatel de Grano Menudo, Airén, and Torrontés. Crafted as a true expression of the vineyard. Manual harvest and selection in the vineyard itself. Destemmed in the winery and spontaneous fermentation with wild yeasts. Transferred to concrete tanks where it rests on its fine lees for a few months until bottling. Battonage, infusing its lees.
